Freskos owner Peter Vouras now gives clients the option to eat in the restaurant or take away. They can even order on the restaurant’s website or smartphone app and have the food delivered to their home or office by Freskos’ third-party delivery partners.
Items on the menu are based on recipes that were handed down by both of Vouras’ grandfathers who owned restaurants in Meriden and Hartford, CT. In addition to the traditional recipes from his grandfathers, Vouras has made versions that added a modern twist to the originals.
In order to keep the menu items close to what his grandfathers prepared in their restaurants, Vouras imports many items from Greece. In particular, he sources feta cheese produced in Greece, which contains 489 types of protein that produce antimicrobial activity to strengthen the immune system, according to the Biomedical Research Foundation of the Academy of Athens.
Although Freskos offers some red meat menu items, the preponderance of selections on the menu follows the Mediterranean way of eating, building meals around fresh vegetables, legumes, and whole grains, fish, and chicken. All meals are made fresh to order.
Since Greek meals would not be complete without ‘mezethes’ or appetizers, Freskos offers a variety of options for customers to start their meals, including stuffed grape leaves, imported feta with Kalamata olives, and giant Greek beans in tomato sauce and olive oil.
When Vouras opened this Greek restaurant, he aimed to provide an alternative to fast food establishments and named it Freskos, which means fresh in Greek. With streaming Greek music, the restaurant offers fresh, authentic Greek food from souvlaki sandwiches to salads and imported Greek yogurt.
Since its opening in 2016, Freskos has accumulated a number of awards, including the 2021 Small Business of the Year from the Hamden Chamber of Commerce and several awards in the 2017 and 2018 New Haven Readers’ Polls.
